Quinoa, Swiss Chard, & Chickpea Salad

Believe it or not, I had not tried quinoa until only a few months ago at a friends dinner party. I honestly had never even heard of it, however, I fell in love right away. I knew that since Nicholas and I are were doing our meatless month, I’d have to try and incorporate quinoa into our diets as I was told it packs a lot of protein. And so, I went out and bought some quinoa and decided to give it a try. The result? A quinoa, swiss chard, and chickpea salad–all items I already had at home. It was surprisingly delicious (my cooking abilities have seem to skyrocketed in the past few months!), a bit nutty, and refreshing. Here’s how I made it:

Friday

Ahhhh, what a lovely Friday. The weather is nice (at least where I am!), the birds are chirping (yes, again), and of course, the royal wedding! I haven’t really been too excited about this whole thing until this morning when I tuned in. It’s pretty amazing how Kate-ahem-Catherine, Duchess of Cambridge, was just a regular person until she met Prince William. Now, she’s walking down the aisle at Westminster Abbey. And, isn’t it funny to think that Catherine has known (of) Prince William her whole life and he, only since the day they met? Ha! Also, I think the dress was very beautiful and just right. It wasn’t as McQueen as most of his creations, however, it was the royal wedding dress McQueen’s way. Well done, Sarah Burton! Have a wonderful weekend! I’m off to go prance around town in a white dress. In the meantime, here are some links from around the web:

Springtime

It finally feels like Spring. For the first time in forever, I was able to hang my feet off the side and observe the Ludlow Street shenanigans from my fire escape…there was even birds chirping. Yes, birds chirping! (Note: Don’t pay attention to our broken up sidewalk. I have no idea what they’re doing. All I know is that the jackhammer they’ve used to tear it up has been waking me up every morning. Hmph.) I’ve also been taking advantage of the colorful clothing I’ve bought in the past few weeks, eating lots veggies (no-meat-May!), and just altogether cleansing myself–physically and mentally. How is the weather where you are?

I was still living in Miami and was really wanting a Chanel purse–it was a classic bag that I could wear with just about anything. However, due to an expensive price tag, this was something that wasn’t going to happen for a while–something I was totally okay with.

And we’re back to New York. It’s been relaxing, it’s been lovely, and it’s been sunny but it’s time to go back to reality. I’ll miss it.
In other news, Nicholas and I have decided to go meatless for the whole month of may. No eating meat, whatsoever. Are any of you vegetarians? Do you have any exciting recipes you’d like to share? Au revoir, cheries!

The Drive (Part Two)

After we left Morro Bay, we drove about two hours north and finally made it to the Big Sur area. A few miles up a windy, scary, very elevated road, we came across a road block.

Apparently, last week there had been a huge rock slide that closed off the Pacific Coast Highway. This was a real bummer. We were already about half hour away from Monterrey and would have to backtrack south about an hour, east an hour, and then north again about two hours. It was a huge road block. We eventually decided to just cancel our hotel in Monterrey and head back to Orange County. Not before enjoying the scenery though!

Some of you may already know that on Sunday, Nicholas and I took off on our “road trip” from Orange County, up the the California coast. Our original plan was to drive the whole day (Sunday) and sleep in Morro Bay the first night. The next day (Monday,) we were to drive up to Monterrey and stay there one night as well. Everything was going smoothly until yesterday, shortly after leaving our inn at Morro Bay (I’ll let you know what happened tomorrow!) Today, I’m just going to post pictures from the first leg of the trip before we hit the road block.

Pacific Theme

Ahhhh, California. We’ve been here for only four days and I already feel that I’ve recovered from the harsh winter that loomed upon New York for much too long. Nicholas and I have been taking it really easy, eating really good food (no In-N-Out yet..soon though!), and just overall chilling out. Tomorrow, we embark on our drive up the coast. We’ve decided to stop one night in Morro Bay and then drive up to Monterrey–is there anywhere you suggest we visit around those areas? In the meantime, here are some more images from the last few days.




P.S-How awesome is Nicholas’ new haircut? It’s very Mad Men…

Around this time of the year, my mind goes through the same exact thoughts. “Oooh, it’s summer. New bathing suit. Oh, AND a new hat! Oh yeah, a floppy one!…Like those vintage looking ones. Yeaaaah.” And then, every year, I find myself buying a new beachy hat. This year, I’ve opted for this thatched straw hat from Urban Outfitters. When I put it on and feel like I’m in the French Riviera. Now if only it could transport me there! What clothing items do you covet this time of year?

One thing I really enjoy about coming to California is the amazing food we eat while visiting Nicholas’ parents. Most of the food is homemade, and I thought I’d compile a few post sharing some of the recipes. Today, I’ll tell you guys about Nicholas’ dad homemade jam. Every morning, we all sit down for tea and eat some toast with jam.

Goodbye East Coast!

Finally, the day has arrived–vacation! In a few hours, Nicholas and I will be on board our Jet Blue flight to LAX (we especially look forward to flying Jet Blue because of their personal TV’s. We don’t have a television at home!) I’m looking forward to sunny skies, palm trees, In-N-Out (YES!), and overall warmth! Calla Lilies

My friend and neighbor, Andrea, produces all the garden segments you see on The Martha Stewart show. Besides that, she gets to jet off with Martha to beautiful gardens around the country. Yeah, we all envy her job. Anyway, every once in a while, I’m lucky enough to get some of the left over flowers from the show, and am always happy to put them on display. Friday, she brought me a really special arrangement of “Black Star” Calla Lilies.

Apparently, hybridizers have been trying to achieve the perfect black flower, and this Calla Lily is the closest they’ve ever gotten. While I see it more as a really deep purple, I think they may be close? Regardless, it’s cool that I get to have these pretty rare flowers around!

Morning Cappuccinos

Before I met Nicholas, my mornings consisted of very bland activities–brushing my teeth, my hair, and, if I was feeling risky, drinking a glass of water. When I moved in with him, that all changed. Mornings, which I always dreaded, became one of my favorite times of the day, partly because of the cappuccinos he would make me. No longer was I making a trek out to Starbucks (Miami hardly offers any coffee-shop alternatives. Really.) for a $3.00 Latte-Ala-Gasoline, now I had home-made, love-filled cappuccinos to help me wake up.

Since then, I’ve learned to make them myself (there’s an art to it!) and when Nicholas isn’t around, I make them for myself, and sometimes even my friends. It’s hard to get through my mornings without one now. However, I definitely can’t do it like the Italians do. When we go to Italy, they drink one just about every hour. I’d be bouncing off the walls if I took it to that level.
