
Going along with our “meatless month,” I decided to bake some vegetable pizza–from scratch! What seemed to be a mighty task, turned out to be pretty simple! I’ve always avoided making anything with yeast because, well, one time I tried to make a loaf of bread and things went terribly wrong.
I followed this simple dough recipe which I found to be actually very easy (usually “easy” recipes end up being complicated in my opinion.) After letting the dough rise and collapse, I pre-baked it for about 8 minutes so that it got a little crispy. I added all my ingredients: roasted asparagus, roasted brussels sprouts, onions, and tomatoes. I then topped it off with some goat cheese which ended up being the perfect cheese to go along with those ingredients.
